Maque Choux Ingredients

  • 1 tablespoon W’ham Seasoning -Cajun,
  • ½ teaspoon Cayenne pepper (optional),
  • 1-2 Tablespoons bacon grease or rendered pork fat,
  • 3 cups Kernel Sweet Corn,
  • 1 cup Okra sliced,
  • 1 cup Red onion, diced,
  • 1 cup Red bell pepper diced,
  • 1 Jalapeno pepper diced,
  • 1 Hatch chile roasted and diced (optional),

Instructions

Heat a large skillet on medium heat with the pork fat. Stir in the onions, peppers and okra, and cook until they begin to caramelize; then add in the corn and W’ham Seasoning – Cajun.

Cook until they soften up, stirring often, about 10 minutes.

Adjust seasoning to taste, then enjoy!
