This is some of the best barbecue rub available in the US. It was designed and made Years Ago by the late John Willingham out of Memphis Tennessee. He won multiple Grand championships at BBQ cook-offs Nationwide using this rub and also used and sold it in his restaurant formerly in Memphis. It is not easy to find this. I have only found it on Amazon. You cannot find it in grocery stores in the Memphis Area any longer. If you have not tried this rub you must try some. It comes in three flavors. I swear by it. You can use it on chicken, pork, beef, lamb, shrimp, and on potato salads. Is extremely versatile. Try some I guarantee you will like it

We love the taste of the Willingham’s seasoning on roasts, burgers, and chicken. It is often used with olive oil, salt, and pepper in the crockpot with a pork and/or beef roast (and water). We simmer it all day. The flavors are great.

I was given this rub by my mother-in-law whose father used it religiously prior to his passing. Not that heritage matters but my MIL’s father was Afr. American and he knew how to season up some meats on the grill/smoker. I tried a self made rub that just didn’t cut it. This rub has all the boldness and subtle flavors for a really nice smoked ribs. I have a hybrid method that I learned from chef on food network that calls for boiling the ribs to about 198 or so degrees (but DO NOT EXCEED 200 degrees) then while the slabs are still hot with the sweat of the slight boiling water I sprinkle this rub on liberally evenly and allow it to sit for about 15-20 minutes to allow the seasons to absorb. I have my smoker all set outside and cook these indirect smoke method so they never get direct heat under them. I use various woods for the smoke and usually soak them in water the night before so they slow burn instead of engulfing when they hit coals. When I make several slabs I stack them on each other as high as the grill lid will allow me. I then just alternate each slab so they get evenly cooked and the juices run on the lower ribs. The final temp for the ribs needs to be about 210 and this usually takes about 2 hours to 2.5 hours. This is a shorter method as you precook the ribs in the water. The hybrid method definitely eliminates the long smoke time you’d normally have. The smoke and heat will cook the ribs like they’ve been on the smoker for hours and your hungry family and friends will never know you didn’t spend 5+ hours at the smoker! The only thing you are doing is cutting down your cooking time which is valuable to many of us. Good luck and enjoy!

BBQ champion John Willingham’s creation has been difficult to find in recent years, so we were delighted to find it available through Amazon. Be sure to try it if it’s new to you. I use Willingham’s dry seasoning on all my ribs in my smoker. Spray the ribs with olive oil pam before you apply the seasoning. This allows the seasoning to stick. Do this the night before and smoke at 250 degrees over Hickory or Oak chips soaked in beer. Never use Mesquite, it will bitter your meat. If you have a water pan use beer not water. 7 hours starting with bone down at first, then meat side down after 2 hours. After 7 hours, reduce to low heat, wrapped in tight foil to break down the meat, heat, for another hour or two. Slicing ribs, always bone up and slice between ribs. I sometimes mix a little steak seasoning with my Willingham’s.

I use this mostly on roasts (tri tip), and it works fairly well. It is quite mild, so there is no super strong taste from it, but it is pleasant and tasty. It is a good value in sense you rub it on, so there is little or no waste (unlike liquid ones where half of it escapes the meat). So, why only four stars? Well, it is a bit mild (I haven’t tried the stronger version), and the flavoring is light. Still, for the money and taste, it is a good deal.

It’s aroma in the jar is a lot like Worcestershire sauce, which I love. I use this on my smoked baby back ribs & brisket. My kids were big sauced rib fans, but when I started serving dry rubbed ribs using Willingham’s, the were hooked! I’ve tried concocting my own rubs, they were never very good, heavy on the paprika, etc. This is not a heavy paprika rub, it’s very savory, not really sweet, which allows me to finish my ribs in the smoker with a little brown sugar, to get a nice carmalized color. This rub is delicious, not spicy hot. I recommend it highly. This is a good sized bottle, good for multiple BBQs.

Everyone that I introduce to this dry rub loves it. Right combination of savory and sweet. Difficult to over-season with this product. Only drawback is that it draws moisture (even in a tightly-closed container) and clumps. Shelf life is short so don’t overbuy. I’ve had to use an electric spice mill to break it up because of clumping. If it turns dark and is clumped solid, throw it out. It has become moisture layden and the flavor profile is no longer the same.

Ok Bambi lovers, try this one. Milder version of Willinghman’s sometimes has some small lumps in it, but no big deal, they easily are mashed. I use it in rubs rather than just shaking it on, so it doesn’t matter to me. Flavor is different than many rubs, I also add this to my own turkey, pork and rib roast rubs which gives it an even better flavor.

I’ve tried alot of seasoning on ribs. I prefer mine dry. My wife and girls like to dunk their ribs in sauce. W’hams is so good, the wife and kids don’t even WANT sauce.The way I prepare my ribs for smoking: apply yellow mustard to the ribs as an adhesive that will allow the W’hams to adhere to. The mustard flavor cooks off and won’t contaminate the flavor of the seasoning. Then I apply a liberal amount of W’hams to all sides of ribs: top, bottom, sides, etc. Then I place in a 1-2 gallon Ziploc bag, and place in fridge overnight. When you take them out the next morning, they have sat in the seasoning and their juices and they are covered with a gorgeous brown paste. Put those puppies on the smoker.A friend at work, who’s from Memphis, turned me on to W’hams. We can’t figure out how it does it but W’hams is unlike any other seasoning. It literally absorbs into the meat while you’re seasoning it. It doesn’t just form a bark on the ribs. It literally penetrates the meat.When I’m done, I take the remaining seasoning and rub it on my chest.I love Willinghams.

I have been using Willingham’s BBQ rub for years on ribs, brisket, pork chops, chicken, shrimp, etc. It is incredibly versatile and adds wonderful flavor to each dish. The key to the effectiveness of any rub is the freshness of the spices and one whiff from this jar will convince you that you can’t get generate any more freshness other than to make the rub yourself. I have done that too and I couldn’t find a recipe that has produced as many consistent compliments as Willingham’s. WARNING…ice cold beer must be consumed while cooking and eating when using Willingham’s!
